Pad Thai

Ingredients
  

Zucchini & Vegetable Noodles

  • 3-4 Zucchinis
  • 1 tspn Rock salt, fine Himalayan Pink
  • 2 Carrots julienne
  • 1 Capsicum, red julienne
  • 1/4 Cabbage thinly sliced

Instructions
 

  • Use a vegetable peeler, spiral slicer or turning slicer to make thick or thin zucchini noodles.
  • Thinly slice / julienne other vegetables.
  • Place all sauce ingredients in a blender and blend until smooth.
  • Pour sauce over vegetable noodles.
  • Sprinkle topping over the dish and enjoy!
