Yacon originated in the Andes and has been enjoyed by South Americans for several centuries. It is related to the Jerusalem artichoke and sunflowers. The edible tubers contain a type of carbohydrate called fructooligosaccharides (FOS), which have a low glycemic index and calorie value.
