Here is a super healthy take on the traditional pad thai, which is gluten free and vegan friendly. Its perfect as a refreshing side dish or for a lunch time meal.
Pad Thai
Ingredients
Zucchini & Vegetable Noodles
- 3-4 Zucchinis
- 1 tspn Rock salt, fine Himalayan Pink
- 2 Carrots julienne
- 1 Capsicum, red julienne
- 1/4 Cabbage thinly sliced
Sauce
- 1/4 cup Olive oil extra virgin
- 1/2 cup Lemon juice
- 1 tspn Ginger grated
- 1 tspn Chilli flakes
- 6 Dates, Medjool pits removed
- 4 Garlic cloves
- 1/2 cup Coconut amino sauce
Topping
- 1-2 Spring onions thiny sliced
- 1/2 cup Coriander leaves
- 1/2 cup Almonds, activated chopped
Instructions
- Use a vegetable peeler, spiral slicer or turning slicer to make thick or thin zucchini noodles.
- Thinly slice / julienne other vegetables.
- Place all sauce ingredients in a blender and blend until smooth.
- Pour sauce over vegetable noodles.
- Sprinkle topping over the dish and enjoy!
