This simple treat can be made without nuts, making it a great snack for kid’s lunch boxes if the school has a nut-free policy.
Cacao Coconut Balls
Equipment
- Food processor
Ingredients
- 1/2 cup Nuts Walnuts, pecans, brazil nut &/or macadamias
- 2 cups Coconut, Shredded
- 5 Dates, Medjool Remove pits
- 1/4 cup Honey, Raw
- 1/4 tpsn Vanilla Powder Or Vanilla Extract
- 1/4 cup Coconut, Desiccated Fine For rolling
Instructions
- Place Nuts and half of Shredded Coconut in a Food Processor. Process until it has a nut butter consistency.
- Add remaining ingredients, except Fine Desiccated Coconut, and process until the mixture begins to clump together.
- Form into balls and roll in Fine Desiccated Coconut.
- Store in the Fridge in an airtight container.
